This grapefruit and avocado salad is incredibly good for you nutritionally, but will also help you have health skin that glows from within. Grapefruits and avocados are both known for their antioxidant properties that help nourish, hydrate and condition. The Vitamin C in grapefruit can also help your body fight the skin damage caused by sun and pollution!
We love this salad because it’s easy to make and very versatile – serve it for breakfast with whole-grain toast or alongside your favorite entree fresh off the grill. It would make a great topper for fish or steak! This salad is delicate, but it packs a flavor punch that we know your taste buds will appreciate!

Grapefruit & Avocado Salad
2 red grapefruit, segmented (learn how here)
1 avocado, sliced
1/2 a small fennel bulb, thinly sliced
fennel fronds (the green tops), for garnish
1 Tbsp. white wine or champagne vinegar
2 Tbsp. extra virgin olive oil
1/4 tsp. kosher salt
pinch of coarse black pepper
In a small jar, shake together vinegar, olive oil, salt and pepper to make dressing.
On a platter, arrange your grapefruit and avocado. Top with the fennel and fennel fronds for garnish. When ready to serve, drizzle with the dressing.
